Okay, I didn't come up with this, I found it on a Star Wars blog, but the results are delicious:
3 1/2 cups ground almond flour
1 1/2 tsp baking soda
Sift together in a large bowl and set aside.
3 room-temperature eggs (separate yolks and whip the whites until stiff peaks form)
1 1/2 cups honey
1 cup unsweetened thick Greek yoghurt
5 Tblspns orange juice concentrate
1 1/2 Tblspn grated orange zest
1/2 cup butter, melted
Preheat oven to 350 degrees.
Beat egg yolks well, then stir in honey, yoghurt, OJ concentrate, melted butter, and orange zest.
Combine liquid mixture with dry, then gently fold in the whipped egg whites. Pour batter into well-greased 10 inch round baking pan.
Bake until top is very golden.
Cool slightly, then flip out onto a plate to finish cooling.
Syrup:
1 1/2 cup honey
1 1/2 cups OJ concentrate, undiluted
Mix honey and OJ together in a saucepan and bring to a boil. Reduce heat and simmer for 5 mins.
Remove from heat and skim/discard froth from syrup. Cool a bit, then pour carefully over finished cake.
Poke cake gently with a wooden skewer to aid in absorption of syrup.
Serve to hungry Mando'ade.
